Chocolate Cake- diebetic friendly recipe

 Mug Cake! 

Chocolate  mug cake!

This was delicious and so easy to make.

Honestly I could have doubled the ingredients and had a full mug of goodness!!


Topped with low calorie redi-whip and sprinkle with crushed peppermint 

Careful not to overcook, cook 45sec,  check, it's ok if still little moisture, it'll soak it up when cooling 

I used monkfruit sweetener

Sweet potatoes are a popular food among people with diabetes, and for good reason. As a root vegetable, the sweet potato is higher in fiber than its tuberous cousin, the white potato. Fiber cannot be digested by the human body, so it provides bulk without adding calories and helps you feel full for longer.

We very seldom follow a recipe as written. I'm always tweaking, adding too, or substituting ingredients to make more diebetic friendly, but never on taste, always enhancing the flavors plus I find by using recipes, myGary, can lend a helping hand... I really like that.

A Twist on Banana Nut Bread: My New Favorite Recipe!

Baking has always been a passion of mine, and one of my all-time favorite treats is banana nut bread. For years, I’ve stuck to my tried-and-true recipe, but today I decided to take a leap of faith and try something new! I grabbed the recipe right off the Pillsbury Flour bag, and let me tell you, it was a delicious decision! Not only did I bake one loaf for myself, but I made two—one to enjoy and one to gift.

Here’s how I made it:

Ingredients & Preparation:

  • First things first, I gathered all the ingredients and carefully measured them for each loaf.
  • Instead of using a food processor to chop my pecans, I decided to use my tiny chopper, which worked perfectly for the job.
  • I then pulled out my beautiful Kitchen Aid Mixer (Thank you Hunny) and mixed all the ingredients just the way the recipe instructed.

Baking Process:

  • I made sure to preheat my oven and baked the bread exactly according to the recipe’s instructions. The smell wafting through the house was amazing!

Fun Baking Tip:

If you’ve ever forgotten to soften your margarine (or butter) in advance, here’s a quick tip for you:
Put a large glass of water in your microwave and bring it to a boil. Then, carefully pour out the water and place the margarine (or butter) underneath the hot glass. It will soften to the perfect temperature in no time!

The Result:

The banana nut bread turned out delicious! The flavor was perfectly balanced, with just the right amount of sweetness and crunch from the pecans. I’m so glad I stepped outside my comfort zone and tried a new recipe. It’s definitely going to be a new favorite!
