Quick Cook Italian Bolognese Americanized

 Bolognese the same as meat sauce?No, while bolognese is considered a type of meat sauce, it's not exactly the same as a generic "meat sauce"; a true Bolognese is richer, has a specific ingredient profile including a higher ratio of meat to tomato, often incorporates milk or cream, and is traditionally cooked very slowly over a long period of time, making it distinct from a typical American meat sauce. 


Easy Quick Cook Spaghetti Bolognese with veggies
This Easy Spaghetti Bolognese with Veggies is packed with tons of flavor and nutrients. This meal will guarantee second helping! This easy bolognese sauce can be served over your favorite pasta, spaghetti squash or zucchini noodles so there's a delicious option for everyone!
This spaghetti bolognese is so hearty, flavorful and delicious! It’s comfort food. And a good opportunity to use veggies.

This easy pasta recipe is ready in about 30 minutes, unlike the slow cook Italian bolognese it's Americanized so it’s perfect for lunch or dinner.
You will definitely want to put this on your grocery list! 

This hearty meat sauce is packed with so much flavor, makes the best spaghetti and will truly be a favorite. Serve with a side of garlic bread for truly the most tasty, flavorful meal! 

What you’ll need:
• Vegetables: carrots, celery, yellow or red onion.
• Cooking essentials: olive oil, garlic, Italian seasoning.
• Ground beef– I used lean ground beef.
• Pasta sauce – I love Rao’s 
(Rao's although it contains small amount of sugar it has the lowest content of sugar than other store bought pasta sauces, I'm a label reader, isn't everyone.)
• Half and half, whole milk or a splash of canned milk, or your preferred dairy product.
• For serving: cooked noodles of choice, spaghetti squash or zucchini noodles.

How to make:
1. Add the carrots, celery and onions to a food processor.
2. Pulse a few times until you have very fine pieces (be careful to stop before they turn into mush). If you don’t have a food processor, you can dice them very finely with a knife. 
3. Heat olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant.
4. Add the diced carrots, celery, and onion. Saute for about 5 minutes.
5. Then add in the beef; season with salt and pepper.
6. Cook and crumble until the beef is no longer pink. 
7. When brown, add the pasta sauce and heavy cream.
8. Stir to combine. Add salt and pepper to taste. Serve with your favorite noodles (or spaghetti squash/zucchini noodles for lower carb). Top with parmesan cheese and a few red pepper flakes and enjoy! 

Make it in Bulk
Store leftover sauce in an airtight container in the fridge for 3-4 days. 
This bolognese sauce freezes great! Just let bolognese cool completely then place in an airtight container or freezer bag and freeze for up to 3 months. To reheat, let thaw then reheat on stovetop until warmed through. 

And as always with any recipe make it your own.

I'm ok with a rough chop, just no crunch. Cook till very soft.

In same pan as veggies brown ground beef, just push veggies to the side and continue to cook veggies.

Also added can of diced tomatoes.

Salt the boiling water and get the pasta going...

Take sauce off the heat add your preferred dairy product.

Pork and Beans Salad

 This is a bright, happy salad. Canned Pork and Beans are tossed with fresh tomatoes, crisp cucumber, sweet red and yellow bell peppers, red onion, celery, carrots, and corn. Bonus – it’s light enough for an easy lunch yet hearty enough for a dinner side dish.


 It’s deliciously fresh, perfectly filling, and one of those salad recipes you just can’t get enough of!

If cans of Pork and Beans are a pantry staple in your house, as they are in mine, then this recipe is super easy to whip up. 

This is a salad that’s simple on ingredients but big on flavor.


Here’s what you’ll need.
• Pork and Beans: We’re keeping this simple by using canned. Just make sure to thoroughly rinse and drain them before tossing them into the salad.
• Vegetables: Cucumbers, tomatoes, red and yellow bell peppers, carrots, celery, canned corn and red onions are a marriage of bright flavors and a refreshing crunch.
No dressing required, it's just that good.

One of the reasons why I love this salad so much is that it’s effortless to make. Just quickly slice and dice the vegetables, drain the pork and beans, rinse, toss everything in a bowl. The perfect speedy dish!
 Don't forget the s&p.

Like many other salads, as always you can add to switch it up, use any of your pantry favorite canned Peas or Beans.

What’s great about this salad too is that it stores well without getting soggy and wilted like other salads.
 It will keep in the fridge in an airtight container for up to 5 days.






PORK N BEANS SALAD 
1 16oz can pork and beans drained rinsed take out the chunks of pork and chop if so desired 
1/4 c. chopped bell pepper, red and yellow 
1/4 c. chopped red onion
1 chopped tomato 
1/4 c. chopped cucumber 
1/4 c. chopped celery 
1/4 c. chopped carrots 
1/4 c. whole kernel corn 
S&P

Mix. Cover and chill before serving.

Meat sauce for spaghetti and crusty parmesan biscuits













 
Too much butter in the biscuits caused them to spread, of course I didn't like that  so I got out one of the smaller biscuit cutters and cut petite mini biscuits that'll be topped with my homemade blueberry sauce for tea time.

Chocolate Cake- diebetic friendly recipe

 Mug Cake! 

Chocolate  mug cake!

This was delicious and so easy to make.

Honestly I could have doubled the ingredients and had a full mug of goodness!!


Topped with low calorie redi-whip and sprinkle with crushed peppermint 

Careful not to overcook, cook 45sec,  check, it's ok if still little moisture, it'll soak it up when cooling 

I used monkfruit sweetener
