It’s deliciously fresh, perfectly filling, and one of those salad recipes you just can’t get enough of!
If cans of Pork and Beans are a pantry staple in your house, as they are in mine, then this recipe is super easy to whip up.
This is a salad that’s simple on ingredients but big on flavor.
Here’s what you’ll need.
• Pork and Beans: We’re keeping this simple by using canned. Just make sure to thoroughly rinse and drain them before tossing them into the salad.
• Vegetables: Cucumbers, tomatoes, red and yellow bell peppers, carrots, celery, canned corn and red onions are a marriage of bright flavors and a refreshing crunch.
No dressing required, it's just that good.
One of the reasons why I love this salad so much is that it’s effortless to make. Just quickly slice and dice the vegetables, drain the pork and beans, rinse, toss everything in a bowl. The perfect speedy dish!
Don't forget the s&p.
Like many other salads, as always you can add to switch it up, use any of your pantry favorite canned Peas or Beans.
What’s great about this salad too is that it stores well without getting soggy and wilted like other salads.
It will keep in the fridge in an airtight container for up to 5 days.

PORK N BEANS SALAD
1 16oz can pork and beans drained rinsed take out the chunks of pork and chop if so desired
1/4 c. chopped bell pepper, red and yellow
1/4 c. chopped red onion
1 chopped tomato
1/4 c. chopped cucumber
1/4 c. chopped celery
1/4 c. chopped carrots
1/4 c. whole kernel corn
S&P
Mix. Cover and chill before serving.
